An Orem, Utah-based restaurant chain, which has been busy expanding within the state and Southwest, is opening its first location in Idaho.
Aubergine Kitchen bills itself as a “health-forward, fast casual” restaurant, and opened for business in Utah in 2014. Since the original location in Orem, it has expanded to 10 more locations around the Beehive State (with one opening soon at Salt Lake City Airport), one in Mesa, Arizona, and one in Las Vegas.
In Idaho, the new restaurant is located at The Village in Meridian, 2206 N Eagle Road, Ste. L-120. A grand opening ceremony will be held on Sept. 19.

The menu features a variety of bowls and protein plates, melts and salads, a variety of beverages, and sweet treats such as smoothies and “niceshakes” and “nice cream.”
“We’re so excited to bring Aubergine to the people of Meridian,” said Elcio Zanatta, CEO and founder. “We’re not just a restaurant, we’re a movement ― and we look forward to making a lasting impact in Idaho.”
The company’s motto is “Eat better, feel different,” and it stated its purpose is to “change lives with real food,” which Mirian Zanatta, co-founder and head chef is done intentionally.
“Everything on our menu is made with purpose,” she said. “We focus on whole ingredients, thoughtful recipes and absolutely nothing artificial.”
